What is the first thing that comes in your mind when you hear “Easter”? To me, this is the beginning of Spring, the chocolate eggs (loads of them) and all the easter desserts we can take home. Here I am sharing my Colourful Easter Cupcakes recipe for you…

Baking has never been my forte but I thought it would be fun celebrating this Easter with some cute and colourful easter cupcakes. So I did a bit of a baking thing-y over the weekend and here are the results…

This is one of the easiest and quick easter cupcake recipes and I really hope you like it (bare in mind that this is my second attempt at baking 🙂 )

Ingredients:

115 g/4 oz butter, softened

115 g/4 oz caster sugar

2 eggs, lightly beaten

85 g/3 oz self-raising flour

25 g/1 oz cocoa powder

25 g/1 oz crushed walnuts (optional)

260 g/9 1/4 oz mini chocolate  eggs to decorate

Frosting:

85 g/3 oz butter, softened

175 g/6 oz icing sugar

1 tbsp milk

2-3 drops of vanilla extract

food colouring (yellow)

1. Preheat the oven to 180 C/350 F Gas Mark 4. Line a 12-cup bun tin with paper cases.

2. Put the butter and sugar in a bowl and beat together until light and fluffy. Gradually add the eggs, beating well after each addition. Sift in the flour and cocoa powder and, using a large metal spoon, fold into the mixture. Here you can add the optional walnuts if you like.

3. Spoon the mixture evenly into the paper cases. Bake in the preheated oven for 15-20 minutes, or until well risen and firm to the touch. Transfer to a wire rack and leave to cool.

4. To make the frosting, put the butter in a bowl and beat until fluffy. Sift in the icing sugar and beat together until well mixed, adding the milk, vanilla extract and the yellow food colouring. Put the frosting in the piping bag fitted with a large star-shaped nozzle. When the cupcakes are cool, pipe circles of frosting on top of the cupcakes to form a nest. Decorate with chocolate eggs.
