I remember when I was a child, I used to visit my grandparents on early Saturday mornings. My granddad always welcomed me with delicious pancakes. Yesterday I took a moment and thought back to that time when pancakes meant weekend spent at my grandparents house… Pancake Day always brings back so many childhood memories… So to celebrate today’s day I am going to share this easy pancake recipe with cinnamon and vanilla extract.

Easy Pancake Recipe With Cinnamon And Vanilla Extract

I am not entirely sure why I wanted to experiment with cinnamon and vanilla extract… Perhaps because I add cinnamon to anything. Vanilla, I had in my cupboard, so I thought why not give it a try…

Even though cooking and baking are not my forte, I took a giant leap and mixed everything I thought it will add extra flavour and make my pancakes puffy.

Preparation time…

I sift plain flour, baking powder, salt and cinnamon in large bowl. In separate bowl I whisked the milk and the lightly bitten eggs and I add few drops of vanilla extract. In the meantime, I melted some butter in small saucepan and then I added it to the egg and milk mixture. Then I whisked everything together until the mixture became smooth.

After that, I poured the milk mixture into the flour mixture and I used a silicone whisk to mix everything together until smooth (you should avoid lumpy consistency, so always make sure all the ingredients are mixed very well).

Time for tossing a pancake…

I used a small non-stick frying pan over a medium heat and I added a knob of butter. After the butter melted, I added a ladle of the mixture. The pancake began to bubble and this is when I knew I had to to turn it over and cook the other side. I know these yummy pancakes are done when both sides are golden brown. Even though I add some butter to the saucepan, I like to spread some on top of the pancakes while they are still warm. This way the pancakes stay soft and moist for longer.

Add honey, blueberries and cream…

You can always serve the pancakes with strawberries and chocolate but I topped mine up with honey, blueberries and cream. The cinnamon and the vanilla extract add extra flavour and sweetness to them. Adding the cream and the blueberries work like a charm. So all you have to do is make a cup of coffee and enjoy your Pancake Day 2017.  Easy Pancake Recipe With Cinnamon And Vanilla Extract

Instructions
  1. Sift the flour, baking powder, salt and cinnamon into a large bowl.
  2. In a separate bowl, lightly whisk together the milk and egg, then add the melted butter. Whisk until smooth.
  3. Pour the milk mixture into the flour mixture and, using a basic whisk, beat until you have a smooth consistency. Avoid any lumps by whisking the mixture properly.
  4. Heat a small non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of the mixture. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown.
  5. Spread some butter on top of each pancake while still warm. This will keep them soft for longer.
Recipe Notes

Serve these delicious cinnamon and vanilla pancakes with honey or chocolate spread. Top up with blueberries and cream.
